1. 1Blend the ingredients: Blend: oat flakes, baking powder, 3/4 of the xylitol, milk, skyr, vanilla flavoring and cinnamon. In the meantime, preheat the oven to 180°C with the fan setting.
2. 2Prepare the carrot: Peel the carrot and grate it on the coarse side of a grater. Grease an ovenproof dish with olive oil. Pour the oat mixture into a 400-500 ml dish, stir in the carrot and chopped raisins. Arrange the chopped walnuts on top of the oatmeal.
3. 3Bake and serve: Bake the oatmeal for about 20 minutes until golden. Blend the cottage cheese with the remaining xylitol and vanilla flavoring. Serve the oatmeal with the cheese cream.
