F*cking creamy omelette with raspberry sauce

1. 1Prepare the raspberry sauce: Put the raspberries in a small saucepan, add 1/4 of the sweetener portion and bring to a boil. Cook over low heat until thawed. Mix the starch with a small amount of water (1 tbsp at most) and stir into the raspberries. The sauce should thicken.
2. 2Prepare the cottage cheese topping: Blend the cottage cheese with 1/4 of the sweetener portion, add vanilla flavoring.
3. 3Prepare the omelette: Crack the eggs into a bowl, add the remaining sweetener, flour, baking powder and mix with a whisk. Pour the omelette onto a heated frying pan and fry covered over medium-low heat until bubbles appear on top of the batter. Flip to the other side. Serve the omelette folded with the cottage cheese cream, raspberry sauce and chopped pistachios on top.
